CONCEPTS was created based on the belief that culinary creativity cannot be limited to ‘food on a plate’. Great food can only be augmented by what is surrounding it: the space, the ambience, and the people.
UNA is the brainchild of chef Martin Milesi, an ephemeral restaurant with only one table for 12 guests. While the kitchen is working for only one table, the guests at UNA will have the gastronomic experience of being attended to exclusively. The project launched in 2014 in the St Pancras clock tower, and after running uninterruptedly in London as a pop-up restaurant, it became now a private restaurant which only opens by request. The idea of UNA is very simple: One restaurant, One table, 12 guests.
DOS aims to invite well-known chefs from all over the world to cook for only one night in London. DOS is about emotional intelligence where Martin Milesi is not the main character of the night but the chefs who he invites like last edition where Josean Alija came to the St Pancras clock tower to cook for journalists and people related with the food industry.
TU is the new concept created by Martin Milesi that celebrates the upcoming opening of his permanent restaurant in London next year. ‘Tú’ will present a sharing menu in a relax environment with sophisticated but casual dishes, easy for everyone’s palate “A real feast from Latin America that aims to re-create a journey throughout the region, from Argentina to Mexico!” who wants to alter the conventional conversation and bet on a new experience in the Refettorio Felix.
